Life is better with BACON
I could be a vegetarian if I was allowed to eat bacon. Most of my meals do not need meat but they could always use a little bacon. When I stumbled on the recipe below via Shutterbean.com (great food blog by the way) I had to check it out. It has become an instant favorite even though it is a little weird, plus it is gluten-free if you go for that sort of thing. So without further ado I bring to you…
Peanut Butter BACON Cookies
6 pieces of bacon
1 cup crunchy peanut butter
1/2 cup white sugar (additional sugar for rolling)
1/2 cup brown sugar
1 egg
1 t baking soda
Cook the bacon. Let cool on paper towel and then chop as finely as you can. Preheat oven to 350 and line two baking sheets with either silpats or parchment. Mix crunchy peanut butter with the sugars for 2 minutes till light and fluffy. Add egg and baking soda and mix for another minute or so. Then mix in the bacon. The batter will be very crumbly. Roll into walnut size balls, roll in sugar, and criss-cross with a fork. Bake for 10 minutes. Let cool on the pan for 5 minutes before moving them. Try not to eat them all in one night.
