Fridge Items that are about to go: Yellow bell pepper, guacamole, tomato, bacon, and chicken broth
Mission: Make a ridiculously yummy meal that makes three people giggle with glee
Challenge Accepted!
Southwestern Stuffed Bell Pepper:Preheat oven to 350. Cut the tops off 3 bell peppers and clean out inside. Bring 2 cups of chicken broth to a boil then add 1 c white rice. Once the rice gets tender, about 15 minutes, add 1/4 c of tomato juice, 1 T hot sauce, 1/3 c of diced tomatoes, 3 diced scallions, 1/4 c chopped cilantro, one can of black beans,1/3 c of feta cheese, and leftover guacamole. Meanwhile, cook four pieces of bacon in a skillet. Once cooked, chop up bacon and add to rice mixture. In the bacon grease, add 2/3 c of chopped kale and cook till tender, add to rice mixture. Stuff the rice mixture into the bell peppers.
Bake for about 15 minutes until bell pepper is tender. Top with feta cheese and broil for 2-3 minutes. Serve immediately!
