Corn Gazpacho–Isn’t it Pretty?

“Isn’t it pretty?!” Growing up my mom often asked this question at the dinner table. Her observation often came as my brothers and I were well into shoveling food into our faces. Sometimes we would give the obligatory head nod and other times we kept on oinking. I often found the question amusing. Good. Bad. Flavorful. Those were the food descriptors I was used to. Pretty? That didn’t seem to fit.

Maybe it is the recent year long habitation with food geeks or that despite my efforts, I am turning into my mother, but suddenly pretty is a fitting food adjective. Dishes like Corn Gazpacho, embody the adjective.  The vibrant red tomato takes on brick like shade when combined with the other ingredients. The flecks of green herbs hide within the brick as if desperately trying to blend in. In an act of defiance the corn kernels shout for attention. Dig in with a spoon and the kernels of gold twinkle, catching your eye and inviting you to taste. Oh the pretty  corn!

Corn is the reason summer is so sweet. When you find that perfect ear, that first crop of the season, that sweet crunch, you can’t help but think of summertime barbeques. You can instantly feel the childlike glee in a face glistening with butter soaked corn bits. Corn provides body to this gazpacho making it more than a jazzy bloody mary. Most of all, the addition of corn kernels allows us to pose the question, “Isn’t it pretty?”

Corn Gazpacho:

1 cup cooked corn kernels

2 c Tomato Juice

2 T chopped red onion

1/4 c diced cucumber

1 tomato diced

1/4 c diced red bell pepper

1 t lemon juice

1/2 t Worcestershire sauce

2 T parsley

1 T olive oil

1 T basil

Hot sauce, salt and pepper

In a blender combine tomato juice, onion, bell pepper, tomato, cucumber, parsley, and basil. Blend on high until pureed. Pour contents of blender into glass bowl and stir in lemon juice, Worcestershire, olive oil, hot sauce and salt and pepper. Adjust flavors to preference. Stir in corn kernels and chill for at least 4 hours before serving.
