60 Day Quest
I don’t believe in diets but I do believe in reframing how you look at food. Any time I have tried to withhold something from my diet due to vanity it has ended in an ugly binge. The pendulum swings so far the other way that any good work I had accomplished is quickly diminished. I don’t think you should eat food because it is “healthy” or because it is “rich in antioxidants” and “high in fiber”. I believe you should eat food because it tastes good.
Unfortunately, there is a perception that healthy food tastes bad or bland. people substitute natural ingredients with artificial flavors or overly processed food to reduce calories. People try to make indulgent dishes fewer calories, which leaves the dinner dissatisfied because they know what the original dish should taste like. I never understood making healthy fried chicken, just eat fried chicken if you want it. There is no substitution for fried.
Lately though, my eating habits have been atrocious and it is starting to affect the way I feel. So I decided to embark on a 60 day healthy eating quest! BUT I am going to do it my way, I want to explore new vegetables, new spices, new cooking techniques. I will not substitute, I want to upgrade and elevate. I want to reframe my perception of healthy eating.
Now, knowing myself, if I didn’t say it out loud I would give up. This is my way of saying it out loud, and I am inviting you to join me! Share your recipes, share your ideas. Let’s take a moment and show that nutritious, healthy food does not have to be boring and bland. Stay tuned…this will get interesting!!

Wow! Thanks Jennifer. This looks delicious! I can’t wait to make this.
Im trying a pork shoulder slow cooked this weekend. Let’s see how the “white meat” is. I know it will be healthy.
