Limes! Limes! Limes!
A friend reached out to me in regards to the plethora of limes she has recently acquired. She is looking for recipes that are vegan and utilize this little green treat. Below are some of my suggestions but please feel free to comment with your suggestions!
Adult Cherry Limeade:
2 oz fino sherry
3/4 oz of lime juice
1/2 oz of cherry syrup
In a cocktail shaker filled with ice, combine sherry, lime juice, and cherry syrup. Shake until chilled. Fill a glass with crushed ice, and strain mixture into glass. Garnish with a cherry and lime wheel.
Agrodolce (think sweet and sour):
6-8 limes (juice and zest) depends on how “limey” you want it
1 cup vinegar (rice wine or white balsamic)
splash of wine
1 cup sugar
Add all ingredients into a small sauce pot and bring to a medium simmer. Reduce until you have your desired consistency. Should be syrupy when cool.
This makes a fantastic marinade for vegetables and tofu. It is also a great to add a splash to rice.
Corn Succotash:
3 ears of corn cut off the cob
3 limes and lime zest (adjust to your “limey” preference)
chopped cilantro
1 small jalapeno
1/4 small chopped onion
Heat a small amount of oil in a saute pan. Add chopped jalapeno and onion to oil and saute until translucent. Season with salt and pepper.
Add the corn niblets, lime juice and zest. Saute for about 2-3 minutes, just until the corn is done. Remove from heat and mix in the cilantro.
Other uses:
I love limes in soup. Just cut and squeeze.
You can make Lime Marmalade. Check my blog for a great recipe adapted from food52.
Use the zest in rice dishes or with wheat pasta.
Candy the lime and dip the edges in chocolate.
