Taco Festival?? Yes Please!
I love working events with my husband. Heck, I love working events! They are fast paced, exhilarating and short-term. Each event has a unique flavor. You can try out whatever dish you want and sell whatever you want. Each event is a new opportunity to meet a new client. You never know what type of group will be brought out by the charity of choice. It is the ultimate people watching combined with food and drink!
April is event season in Arizona. Luckily, I have been able to squirm my way into three of my favorite events. The first event was a wine and silent auction to support the art museum. We made two different grilled pizzas. One was the classic margarita and the other was a spicy copa with peppadews. Grilled pizzas are one of my favorites! They have a smoky, crunchy depth that broadens your views of what pizza should be. We were a favorite that night. The next event was at an outdoor shopping center showcasing 50 restaurants to support afterschool programing. We served a squid ink agnolotti with house made ricotta and a parmesan crema. It was like fluffy pillows in a cheesy blanket. Instant hit!
This weekend held the first ever taco festival! It was an all day event filled with margaritas and chile eating contests. Restaurants competed for the best taco in the categories of chicken, seafood, pork, beef and wild card. They had around 5,000 people attend the festival and it was insane!
We brought two different types of tacos a chicken and a pork. The chicken was braised with chipotle on top of a garlic aioli with a pickled cabbage slaw and an avocado crema. The pork carnitas was topped with the cabbage slaw, pickled watermelon rind and a peach fresno salsa. Both were amazing and we did not stop moving the entire event.
Bottom line… we sold 1,480 tacos from 11:00am to 7:00pm. We ran out of food 3 times. We had to buy 150 tortillas from the booth next door. We didn’t win. We had a ton of fun. Next year….we will take the trophy!
